Is this a printed book you mail me?

No, nothing ships. It is a file in two formats: PDF for the tables and for printing, EPUB for reading on a phone. Both download the moment you pay.

Is this written by an Amish person, or with a community's blessing?

No, and the book says so on its first page. Amish Insider is independent and educational, not affiliated with or endorsed by any Amish church, settlement or family. What the book contains is household method drawn from published, citable sources: canning times from the USDA, storage figures from Extension services, ratios you can check. It sells verified method, not inside access.

Practice varies between settlements. Does the book pretend otherwise?

No. Every entry carries a label, and one of them is VARIES, used wherever practice genuinely differs between affiliations on power, lighting, refrigeration, transport or dress. Where there is a range, the book sets out the range instead of picking one version and hiding the argument.

What stands behind the material is the sourcing: canning times from the USDA Complete Guide to Home Canning, storage and garden figures from named Extension services, cure ratios worked out by weight, and a label on every entry saying whether it is a tested procedure, ordinary practice, a historical record, or a thing that varies from one settlement to the next. Where the evidence is thin, the book says so rather than filling the gap.
